Pilgrim Chai is handcrafted by Circa Espresso, one of Sydney’s most celebrated cafés. We began blending our own chai back in 2012, simply because we couldn’t find a blend we truly loved. Most options on the market didn’t roast their spices, and many were machine-made lacking the depth, aroma, and authenticity we were looking for.
So, we took matters into our own hands. We developed our own recipe, roasting whole spices to unlock their full flavour and making each batch by hand no machines, no shortcuts.
About a decade ago, the owner of Circa began refining a unique sticky chai blend, inspired by time-honoured recipes and a love for bold, balanced flavour. After years of experimenting (and plenty of taste-testing), we landed on what we believe is chai perfection: rich, aromatic, and full of depth where every spice shines.
Today, we offer two signature blends:
Our original sticky chai — sweet, sticky, spicy.
A plant-based version — naturally sweetened with coconut flower blossom nectar.
